Northern East Hokkaido, there’s the little town called Shibetsu, Salmon City. This town has the harbour that local people sail the boat 12 km far from the coast to harvest tons of Salmon. These Salmons is distributed around Japan including Tsukiji Market in Tokyo. You can make sure that these Salmon are fresh with delicious taste.

There’s 3 Restaurants that I’ve been in Shibetsu, Hokkaido which not only tasty but some menu are very new for me.

Shibetsu Akemi Restaurant

Akemi (あけみ食堂)

Mainly offers Sushi, Sashimi, Ramen. With decoration of the restaurant that when you enter you will definitely meet Sushi Master at the Sushi Bar. Akemi also has 3-4 private rooms available. Osamu san, Shibetsu Sushi Master here also be our instructor of Shibetsu Sushi Making Class for someone who interested to learn how to make Sushi too.

How to come here is quite easy. It takes only 25 minutes from Nakashibetsu Airport heading to Shibetsu Town using Senpyo National Highway until meet 3 Junctions turn left to Notsuke National Highway. The easy spot that make you realise that we are near Akemi is Shibetsu Post Office Turn right at the corner, you will find Akemi on the right hand side.

Shibetsu Salmon Sashimi

1.Salmon Sashimi ( サーモンの刺身 )

First plate that everyone come to Shibetsu must finding is Salmon on Sashimi set. You will feel its fresh, smooth & rich taste of Shibetsu Sashimi here. This Raw salmon also come with Shrimp, Maguro, Squid, Sweet Eggs and so on.

Taste Note :
With soft spicy taste of wasabi and salty flavour of shoyu made this Sashimi delicious and full-flavoured.

Shibetsu Salmon Nigiri Sushi on the Party Platter

2.Salmon Nigiri ( サーモンのにぎり )

Salmon Nigiri can both come as pieces or with Party Sushi Platter. Proper amount of vinegared rice on top with perfect slice of raw Salmon makes this's a must sushi in Akemi, Shibetsu

Taste Note :
Salty & mellow flavour of Salmon and sour taste from vinegared rice. Don’t forget to dip with Shoyu sauce. It would be fantastic!

Shibetsu Salmon Chan Chan Yaki

3.Salmon Chanchan Yaki ( 鮭ちゃんちゃん焼き )

Salmon Chanchan Yaki. Bringing Cooked Salmon to warm on Electric Stove. It’s combination between salmon, cabbages and others vegetable. Wait until it warm enough then pouring the special sauce spread over whole salmon after that use chopstick to mix it together. This plate can be shared to more than 6 people.

Taste Note :
Sweet & Mellow because of Akemi Special Sauce that blended well with Salmon and Vegetables.

The Local Japanese Restaurant on Notsuke National Highway. It takes only 5 minutes walk from Shibetsu Town Office. Or 210 m. from Hotel Kawabata

Shibetsu Chinmi Appetizer

4.Chinmi ( 鮭の珍味三種 )

An appetizer or starter which called “Sake no chinmi sanshu” that serve before the main dishes. This Chinmi is quite different and we rarely can find this to eat somewhere else in the world or even in Tokyo. Chinmi Appertizer included with 3 kinds from left to right.

1.Cho no Shiokara (腸の塩辛) which is Salmon Intestinal.
2.Hizu sunomono (氷頭酢物) which is Salmon Cartilage Nose.
3.Mefun (めふん) which is Salmon Salty Kidney.

Taste Note :
1.Cho no Shiokara : Mainly salty and gummy.
2.Hizu sunomono : Sour from vinegar contrast with softly crunching of salmon nose make this appetizer very interesting.
3.Mefun : Salty and smelly but taste nice.

5. 3 Seasons of Salmon ( 幻の鮭ルイベ味比べ )

or in Japanese called "Maboroshi no Sake masu Ajikurabe"You will have 6 pieces of Salmon consist of;

2 pcs. of Shiro Salmon (Left One) 
2 pcs. of Sakura Salmon (Middle One)
2 pcs. of Toki Salmon (Right One)

The special of this plate is you can try different tastes of Salmon at a time.

Taste Note :
Shiro Salmon : Thick texture with good taste.
Sakura Salmon : Smooth texture and very juicy.
Toki Salmon : Cold texture, it's thick at first but smooth at last. Very delicious.

Shibetsu Grill Salmon

6.Grilled Salmon ( 焼き魚定食・鮭)

In Japanese called "Yakizakana teishoku sake" You will have a great time with this Grilled Salmon because salt grill make this salmon little salty. We use whole salmon spit down the middle to easily eat. The person who love salmon and grilled fish must love it!

Shibetsu Salmon Shabu Shabu

7.Salmon Shabu Shabu (鮭しゃぶしゃぶ)

This Salmon Shabu Shabu is different from another place because instead of the pot, they bring paper burnt resistant used as a bowl, lighten fire on the stove. After we put chinese cabbage, needle mushroom in the paper bowl. We wait until it boiled then we can bring salmon into the hot soup. Normally we just soak salmon to get boiled until it’s medium well after that, Salmon Shabu Shabu has been done!

Taste Note :
Smooth and soft taste. It’s perfect for someone who love eating Shabu Shabu because the soup is plain with little sweet. Also the way of making this you will be enjoy from the first step until last.

Shibetsu Salmon Onigiri

8.Salmon Bushi Onigiri ( 鮭節おにぎり )

In Japanese called “Sake-bushi onigiri” Normally Onigiri from Minimart like Lawson, Family Mart or 7-11 will covered with seaweed but here in Shibetsu they use Dried Salmon (Salmon Flakes) to wrap the rice ball. Inside the Onigiri is placed with salty salmon. Salmon Onigiri served with Pickled vegetable as side dishes. 

Taste Note :
Soft Salty and satisfied. Dried salmon that stick with sticky rice is really the signature of this Onigiri, with also Ikura (Salmon Roe) on top help this cuisine become one of a must in Takeda, Shibetsu.

Salmon Tei (サーモン亭)

The Salmon Rice Bowl Restaurant is located in the Shibetsu Salmon Park Museum. You can have a great lunch after you visit the museum. Fish Market is outside where you can choose and buy it back home.

Shibetsu Salmon Don Set

9.Salmon Oyakodon Set (鮭親子丼)

Rice with Raw Salmon on top decorated with Ikura, eggs and seaweed.  This set meal called "Sake oyakodonburi"  in Japanese. Salmon Oyakodon serve along with  Miso Soup and Japanese pickled cucumber (Kyurizuke).

Taste Note : Raw salmon with deep soy sauce taste mix and match with Japanese Rice. Also properly warm Miso soup helps added full-flavoured of this cuisine.

Have you ever tried 3 seasons of salmon in 1 plate? If not, you should take a look in this post. If you come to Shibetsu, this is a MUST you need to try.

HOW TO EAT THESE SALMON?

Actually you can just use your chopstick to put some wasabi in Shoyu, and grab any piece of salmon that you want, dip in Shoyu and done! I don't deny that you cannot do like that but Japanese people who bring me there suggest me to EAT FROM LEFT TO RIGHT, Why? Because it's better to eat them from light taste to deep taste.

This plate has 3 kinds of Salmon. Start from the left side...It's called "Shiro Salmon" (White Salmon) next one is "Sakura Salmon" and the last one on the right is "Toki Salmon" There're 2 pieces each kind.
